the story of a new culinary instructor… and some other stuff too

why

I’m a chef doing a stint as a culinary instructor who believes when we eat something we eat everything that happened to make that food come into existence. We are affirming a certain version of the world.

Not too long ago I graduated from culinary school… Now, I’m teaching it. Frightening, I know. Not frightening in the sense that I’m not capable or qualified to teach, but frightening in the sense that I will have a part in shaping what kind of cooks these students will become. It’s a responsibility. One that is not without humor, good natured teasing, a firm hand and a genteel nudge to push them forward without being pushy.

I speak to my students about balance and striking one not only on the plate, but in their personal lives as well. They are green… they don’t know yet how cutthroat and vicious working in a restaurant kitchen is; they also don’t know how rewarding it can be too.

Toque and Dagger is the place where I can vent, tell stories,  be honest and share something funny.  Let’s just see how this evolves…

This blog is and it’s contents are solely my own views and opinions, stories of my students (who’s names have of course been altered, or changed), their triumph and failures, what I have to teach them (as mandated by corporate) and just how silly some of it is… I need a place to vent and I hope you enjoy.

    • thanks…check back often, it’s a work in progress. if you like… pass it along the “gospel” of toque and dagger… from time to time, i’ll post chef secrets that the home cook will LOVE. stay tuned.
